Albert’s Meats Country Breakfast Sausage Ragin’ Cajun Burgers 
• 1 LB lean ground beef
• 1 LB Albert’s Meats Country Breakfast Sausage
• ½ C finely chopped sweet onion
(Vidalia or Walla-Walla work nicely)
• ½ C. finely chopped green bell pepper
(about 1 medium pepper)
• 1 TB garlic powder
• 1 tsp each paprika, cayenne pepper, oregano, cumin, thyme, and basil
• 2 tsp salt
• 1 TB Worcestershire sauce
• A few shakes Tabasco sauce (if desired)
Place meat in large bowl. Using your hands, combine meats with onion and pepper.
Add spices, salt, and sauces and work into meat mixture.
Form 8 quarter LB patties. Grill on hot fire about 7 minutes per side, or until an internal temperature of 170 degrees is reached.
Serve on toasted hamburger buns, with lettuce, tomato, and remoulade sauce (recipe follows).
New Orleans Style Remoulade
• ½ C spicy brown mustard
• ½ C mayonnaise
• ¼ C chili sauce, or ketchup
• 1 TB Worcestershire sauce
• 3 TB prepared horseradish
• 1 clove garlic, minced
• 2 TB grated yellow onion
• 1 green onion, chopped, green part included
• Juice of ½ lemon
• 2 TB parsley
• 2 tsp paprika
• ¼ tsp each cayenne and black pepper
Combine all in medium bowl. Refrigerate for 2 hours, or overnight. If more spice is desired, add hot sauce, or additional cayenne.
